Black Bean and Chickpeas with Vegetables

Cooking: 26 mins in Instant Pot or about 60-75 mins on stovetop Serves 3-4 2 tbsp of olive oil 3 x cloves of garlic, minced 2 x yellow onions, chopped 2 -3 tomatoes, de-seeded, skins removed, and chopped (or a can of chopped tomatoes) 1/2 cup of dried chickpeas, soaked overnight 1/2 cup of dried black beans, soaked overnight 1/3 cup of vegetable broth or water 1 tbsp of fresh oregano, minced or 1 tsp of dried 1 tsp of ground curry 1/2 tsp of ground cumin 1/2 tsp of salt 1 -2 tbsp of lemon juice 3 x medium potatoes (chopped into chunks) 1 cup of green beans, trimmed and cut into 1-inch pieces 1 to 1 1/2 cups of mushrooms, quartered 1 – 2 zucchinis, sliced into 1/2-inch rounds Instant Pot Method: Set the Instant Pot to Sauté, High for 10 mins and add the olive oil. When the pot is Hot, add the garlic, and brown for 2-3 minutes. Add the onions and continue sauté, until the onions are translucent, about 6-7 mins. Add the spices, salt, tomatoes, pre-soaked beans and chickpeas to the Instant Pot, along with with 1/3 cup of broth/water and select the Bean/Chili setting for 8 mins at High Pressure. Release the pressure naturally, or use the Quick release. Add the potatoes and set on Pressure, High for 4 mins. Release the pressure naturally, or use the Quick release. Add the green beans, zucchini and mushrooms, set on Pressure, High for 4 mins. Release the pressure naturally, or use the Quick release.

Stovetop Method


In a large pot, fry the onions, garlic and in olive oil for about 5 to 10 mins.


Once the beans and chickpeas have soaked overnight, drain and rinse them and place them in the pot with the onions, garlic, tomatoes and with enough broth to cover. Add the spices, mix and bring to boil. Reduce to a simmer for about 60-75 mins, or until the beans and chickpeas are soft/crushable.


Meanwhile, in another pot, bring water to a boil and add the potatoes and simmer for 20 mins.

Just before the beans and potatoes are done, in another pot, steam the zucchini, mushrooms and green beans for about 10 mins, or until tender.


Add everything together and serve.
